Collagen Brownies

I’ve done a lot of wild things in the name of wellness. But developing a brownie recipe… me, the self-proclaimed lemon poppyseed muffin girly, making brownies, might just take the cake. Or the collagen-infused, protein-packed, low-sugar square, in this case.
You see, I overheard a certain someone say he liked brownies. And just like that, Miss Independent turned into Miss Baking Chemist trying to figure out the right ratio of collagen to flour.
Mind you, I don’t even like brownies. But I do like making people I care about feel good. So I set out to create the perfect treat: one that checks the boxes for taste, health, glow, and love. A brownie that won’t spike your blood sugar, break you out, or have you sprinting for a Tums.
These are brownies you can eat before the gym, after dinner, or honestly, straight from the pan in your kitchen while contemplating life and love (or your next Substack post). And yes, they’re actually good. So good that even I, the not-so-chocolate girl, ended up falling for them too.

Collagen Protein Brownies
Low Sugar, Gluten Free, High Protein, Refined Sugar-Free
Prep time: 15 minutes
Cook time: 1 hour
*makes 16 brownies
INGREDIENTS:
2 eggs
1 tbsp vanilla extract
½ cup almond butter
1 tbsp baking powder
1 tsp Celtic sea salt
½ cup oat flour
½ cup almond flour
¾ cup collagen protein powder
½ cup cocoa powder
¾ cup monkfruit sweetener
¼ cup coconut oil (melted)
¼ cup unsweetened applesauce
Optional: ⅓ cup sugar-free chocolate chips
INSTRUCTIONS:
Preheat oven to 325°F. Grease an 8x8 baking dish.
In a large bowl, whisk eggs and vanilla. Add almond butter and mix until smooth.
Mix and stir in dry ingredients: baking powder, salt, oat flour, almond flour, collagen, cocoa, and monkfruit sugar.
Add melted coconut oil and applesauce. Mix until just combined.
Fold in chocolate chips, if using.
Pour into the baking dish and spread evenly.
Cover pan with foil loosely, to ensure the center cooks.
Bake for 30 minutes, and check with toothpick.
Keep baking in increments of 5-10 minutes, to reach a total cooking time of 45-60 minutes.
*NOTE: The center may still appear slightly undercooked but the edges will pull away. The center will harden while cooling after baking.Cool for 30-60 minutes before slicing into 16 brownies.
